For many wineries, respect for nature, its life cycles and the authenticity of its fruits is a philosophy of life.
This is why sulphites are seen as enemies to be avoided or in any case limited to a minimum.
But what are sulfites?
Sulphites are nothing more than chemical compounds derived from sulfur, often present in a completely natural form in many foods. And equally naturally they are chemical compounds which in some particular wines are produced during the fermentation of the grapes, albeit in very small quantities.

Therefore, a minimum quantity of sulphites is always found in wines for the needs of its conservation.
The important thing is to limit its use in the name of the authenticity of the grape and the territory from which it comes.

In this article I am mentioned among the wineries that have joined the “Freewine”, a project with the aim, through a disciplinary, of making substantial reductions in the quantity of added sulphites in the wines produced by the participating companies.
My two Montepulciano d’Abruzzo, Castra Murata and Concato, are mentioned precisely for their exceptionally low sulphite content.
